Over the last eight years (the years we have been milking since moving to Hyattville 26 years ago, and sharing with those that want to drink Raw A2 milk & eat the other healthy products we’ve created from the milk) Diamond S Delights has made numerous products, from fresh milk, cream & butter to fermented drinks, hard and soft aged cheeses, fresh pressed and stretched cheeses. The little farm business is growing to a point of one person not being able to handle all of it themselves. With that said, in the past couple weeks we’ve had several; both from Worland and TenSleep offer to make our deliveries. Worland deliveries are Tuesdays, at Bee Healthy. If we need to add a day or change the day we will, so please communicate what day of the week works best for you. TenSleep deliveries are Thursday, at TenSleep Vet Clinic. Get in touch ASAP to be back on our list.
Our list of products will be very slim for now. So far 5 of our 7 girls have calved and are milking, but we are sharing our precious milk with 7 calves. We have had 9 sets of twins this calving season, with less than 100 beef cows left to calve. Please let me know if your needs have changed from November, and if you are ready to be back on our weekly delivery schedule. Our supply of milk is still limited somewhat so first come first serve.

With the recent and ongoing health scare, we are reserving milk each day to make kefir. Kefir is said to have 30 times the amount of beneficial bacteria & enzymes of yogurt and many more strains that help our digestive systems. Lots of you have already been drinking our kefir for years. Let's hear from some of you and get you started back on a weekly delivery! Help and share with everyone we care about & get them drinking a healthy fermented drink of kefir for their digestive systems and to keep us healthy and thriving. If there is anything we can help you with please let us know.
In the past few years many of you have visited our ranch dairy and joined us either making cheese, sourdough bread, sauerkraut or sharing in many lost and traditional methods of cooking. This spring sometime in April we have been asked to participate with PBS Wyoming in a fresh cheese and fermented milk presentation, that should be televised sometime in 2020. We will keep our weekly clients updated on when this will take place and invite you to share with us in the process. It promises to be a good learning process for all. We hope you will join us. In the mean time, lets get you back on your raw milk products.

What we will be delivering this coming week, beginning Tuesday, along with all regular, milk, kefir, yogurt and butter orders. Deliveries are pushed back a day due to Memorial Day on Monday.
Monterrey Jack Cheese available - Tuesday May 28th thru Thursday May 30th
This kind of cheese originated along the central California coast and has become popular throughout the United States. Although it was inspired by European cheeses, it’s one of the few cheeses which can rightfully be called “American”. It was actually developed before California became a U.S. state, and it has a long and colorful history. Franciscan monks in monasteries around the Monterrey region first made the cheese in the 1700’s, creating a cheese that is aged only briefly before being served.
This cow’s milk cheese is semi-firm with a creamy, mild flavor and high moisture content. Mexican-and Spanish inspired cuisine in California often use Monterrey Jack. The cheese melts very well, making it quite suitable for grilled cheese sandwiches.
Sixty four pounds of milk was turned into Monterrey Jack cheese and one 8 pound wheel will be cut and packaged and saved for those of you interested in this fresh cheese. Please message me 307-272-5334 if interested and a package will be marked with your name and left in the frig for you Tuesday May 28 or Thursday May 30th. Package sizes vary in price from $4.50 to $7.50.
If you can use some sweet whey for any of your cooking needs please order a quart or ½ gallon and bring a clean jar of the quantity you can use to take whey home each time we have some available at no charge if you bring your own clean jar. This week "our girls" gave us enough milk to fill all the milk, kefir, cream, butter, and buttermilk orders, plus 8 extra gallons. One half went to an old favorite that several have been waiting for for quite a while. Garlic-Chive Fresh Pressed Cheese. Out of the 5# wheel we have 5 wedges left ranging in size from 6 to 11 oz. Prices range from $3.75 to $7.00 per wedge. Please message me if you want one reserved. We also have 3 pints of Marinated Feta left from last batch. New batch to be ready May 6th. The new butter seems a little different but I really like. We have 1 pound not spoken for @ $12.00. If you haven't tried it yet there are small cubes at Bee Healthy in the door of the frig. It's always such a joy to visit with like minded folks. Last week I was treated to pictures of Mozzarella Cheese they had made then used this cheese to make their pizza. Next time I'll remember to ask for pictures...they too utilize all the different products, including the whey, making carmels. Our whey this week went into Ricotta. 2 gallons make 12 ounces, but it is delicious and will be a family favorite tomorrow. Folks after my heart! EXTRAS to CLAIM SOON:

Notice how I didn't say mastered new tricks!!! In the past few months we've gone through a motor on one butter-churn and the other is out of commission at the moment too, so we've invested in a butter churn made and perfected in Turkey!
This week I have 10 samples of three Turkish products for an introductory price of $3 for the group. The first 10 to respond to this note will help us determine if all the work in learning a new trick is worth it!

Diamond S Ranch
That means it's past the middle of March. Yikes! Lots happening on the Diamond S Ranch with all the new calves, we are ever so thankful to have made it through the past few weeks of cold, and our prayers go out to all those ranchers in South Dakota Nebraska & Arizona that are enduring much more than cold weather.
Our little Dairy will be slowing down on production for the next couple or more months. We've just dried up two first calf heifers to give them time to re-cooperate before their second calf is due to be born. Our third heifer will be dried off within the next few weeks. An older cow calved 3 days ago to fill some of the gap, but unless one of our beef cows looses a calf we will be sharing her milk.
With all of this said, I truly hope you have been enjoying the extra goodies Diamond S Delights has been delivering, Maple & Regular Kefir, Mozzarella Cheese, Cottage Cheese, Cultured Butter, a variety of flavors in our Yogurt Parfait Cups, Greek Yogurt & Whipping Cream plus Marinated Feta. These last few months have been very full of creating fresh products. Starting this week we will be filling MILK ORDERS only. All other products are on hold until further notice.

Have to let you know what's coming this week. Thank you to a special little one that requested Halloumi. Just sorry she has waited so long for it. Monthly orders are very much appreciated as well as the weekly ones. Those keep us making the special treats. We have weaned four calves so our milk production has picked up. No more shorting some of you. Thank you for your patience. We encourage you to get back on the winter milk wagon! We have milk!!

With Thanksgiving behind us and the Christmas season soon upon us - so many blessings to count that sometimes we have a hard time listing them. If you ever find yourself in this situation maybe you are like me and need some quiet time, it's then we can take time to really listen and see that the lessons we've just been given are really blessings that take more time to uncover. I recently remember saying my prayers to help me do a good job with all the different little aspects of our tiny micro-dairy. If the next lesson is a blessing you will be meeting a talented writer that spent time at the Diamond S Ranch. "Following me" is what she called her time here, but what a sweet inspiration in more ways than we can count. Seems like yesterday but she has a sweet little family of her own now and wants to keep her Wyoming memories alive. So please watch for a new twist on our Blog maybe after Christmas, maybe before!! But for now I would like to introduce you to a few newbies at the Diamond S then we will tell you what we have this week!!
Upper left is Mae, newest sweet heifer born in August. She's untying my shoe. Opal is the newest milk cow, joining us this month, Princess & Cameron joined the milking herd earlier this year. On Thanksgiving Day Marge (the duck) & Lisa joined the little laying girls. Marge's eggs are as large as our heirloom hen's dark green eggs but are brown. Watch for one of these nice eggs in your carton. We are so sorry but this time of year the little girls slow their egg laying so some of you have been shorted. The bottom picture is a shot of the different kinds and sizes of Sauerkraut that our group of 12 made on November 3rd & bottled and labeled on November 26th and 27th. This is not really a Diamond S Delights regular product. It's something we do together to help others learn and preserve some wonderful veggies from Lloyd Craft Farm. November 3rd we started with 92 pounds of fresh veggies. For helping, learning, teaching and sharing everyone got or will get some of each kind. Several have shared their favorite kind - I hope others will post comments sharing their experience and favorite kraut with others. We are taking orders for what's left so please order this week and store in your frig. Now let's list a few extras for the week of November 29th thru December 5th.
Another blessing in disguise, we waste not a drop of our A2/A2 delicious milk. We again will make hard cheeses when our supply is higher than our demand for the fresh goodness. We owe it to the Raw Milk community to produce the best and cleanest milk possible and are ever so thankful for the food freedom act that allows us to choose the quality of our food. Our raw milk family is growing in numbers lets not forget these blessings and do our part to make sure the government has no reason to step in and change a real blessing. We deliver fresh goodness weekly. Monday to TenSleep and Thursday to Worland. May we continue for many years to come. All the girls make me smile each and every day...So so many blessings. On November 3rd a group of us got together to turn approximately 85 or more pounds of veggies into nourishing fermented sauerkraut. We made four different kinds using heirloom and kaitlin cabbage, red cabbage, carrots, beets, ginger, onion, garlic, black radish and dill. Locally grown veggies so we all knew how fresh and delicious they all were. There are so many recipes you can source on the internet but we just started with our family's favorite ingredients and added a few new ingredients upon request to create a new recipe. This was a day to share and learn from each other, knowing we had a lot of veggies to chop and get in the crocks a few hours. Mission accomplished, and we all will be stocking our refrigerators to enjoy the harvest long into the winter months. Everyone picked a station that suited them. We will bottle our work shortly after Thanksgiving.
First is Savory Kraut, Variation to the Red Zinger (addition of carrots) Red Zinger, KC, and Captain's Kraut. We have extra quarts not spoken for so if you are looking for some tasty sauerkraut order soon.
This week and every Thursday by 3 pm at Bee Healthy we will be delivering pre-ordered, Whipping cream, Milk, Chocolate Milk, Kefir, Maple/Vanilla Kefir, Greek yogurt, Cultured Butter, Marinated Feta and aged cheeses, Tomme, Havarti, Cheddar and Swiss. Many of you are on our weekly delivery, no need to contact us unless you have changes or additions. Regular orders filled first. You can be put on our waiting list and notified when products are available.
