Have to let you know what's coming this week. Thank you to a special little one that requested Halloumi. Just sorry she has waited so long for it. Monthly orders are very much appreciated as well as the weekly ones. Those keep us making the special treats. We have weaned four calves so our milk production has picked up. No more shorting some of you. Thank you for your patience. We encourage you to get back on the winter milk wagon! We have milk!!

With Thanksgiving behind us and the Christmas season soon upon us - so many blessings to count that sometimes we have a hard time listing them. If you ever find yourself in this situation maybe you are like me and need some quiet time, it's then we can take time to really listen and see that the lessons we've just been given are really blessings that take more time to uncover. I recently remember saying my prayers to help me do a good job with all the different little aspects of our tiny micro-dairy. If the next lesson is a blessing you will be meeting a talented writer that spent time at the Diamond S Ranch. "Following me" is what she called her time here, but what a sweet inspiration in more ways than we can count. Seems like yesterday but she has a sweet little family of her own now and wants to keep her Wyoming memories alive. So please watch for a new twist on our Blog maybe after Christmas, maybe before!! But for now I would like to introduce you to a few newbies at the Diamond S then we will tell you what we have this week!!
Upper left is Mae, newest sweet heifer born in August. She's untying my shoe. Opal is the newest milk cow, joining us this month, Princess & Cameron joined the milking herd earlier this year. On Thanksgiving Day Marge (the duck) & Lisa joined the little laying girls. Marge's eggs are as large as our heirloom hen's dark green eggs but are brown. Watch for one of these nice eggs in your carton. We are so sorry but this time of year the little girls slow their egg laying so some of you have been shorted. The bottom picture is a shot of the different kinds and sizes of Sauerkraut that our group of 12 made on November 3rd & bottled and labeled on November 26th and 27th. This is not really a Diamond S Delights regular product. It's something we do together to help others learn and preserve some wonderful veggies from Lloyd Craft Farm. November 3rd we started with 92 pounds of fresh veggies. For helping, learning, teaching and sharing everyone got or will get some of each kind. Several have shared their favorite kind - I hope others will post comments sharing their experience and favorite kraut with others. We are taking orders for what's left so please order this week and store in your frig. Now let's list a few extras for the week of November 29th thru December 5th.
Another blessing in disguise, we waste not a drop of our A2/A2 delicious milk. We again will make hard cheeses when our supply is higher than our demand for the fresh goodness. We owe it to the Raw Milk community to produce the best and cleanest milk possible and are ever so thankful for the food freedom act that allows us to choose the quality of our food. Our raw milk family is growing in numbers lets not forget these blessings and do our part to make sure the government has no reason to step in and change a real blessing. We deliver fresh goodness weekly. Monday to TenSleep and Thursday to Worland. May we continue for many years to come. All the girls make me smile each and every day...So so many blessings. On November 3rd a group of us got together to turn approximately 85 or more pounds of veggies into nourishing fermented sauerkraut. We made four different kinds using heirloom and kaitlin cabbage, red cabbage, carrots, beets, ginger, onion, garlic, black radish and dill. Locally grown veggies so we all knew how fresh and delicious they all were. There are so many recipes you can source on the internet but we just started with our family's favorite ingredients and added a few new ingredients upon request to create a new recipe. This was a day to share and learn from each other, knowing we had a lot of veggies to chop and get in the crocks a few hours. Mission accomplished, and we all will be stocking our refrigerators to enjoy the harvest long into the winter months. Everyone picked a station that suited them. We will bottle our work shortly after Thanksgiving.
First is Savory Kraut, Variation to the Red Zinger (addition of carrots) Red Zinger, KC, and Captain's Kraut. We have extra quarts not spoken for so if you are looking for some tasty sauerkraut order soon.
This week and every Thursday by 3 pm at Bee Healthy we will be delivering pre-ordered, Whipping cream, Milk, Chocolate Milk, Kefir, Maple/Vanilla Kefir, Greek yogurt, Cultured Butter, Marinated Feta and aged cheeses, Tomme, Havarti, Cheddar and Swiss. Many of you are on our weekly delivery, no need to contact us unless you have changes or additions. Regular orders filled first. You can be put on our waiting list and notified when products are available.

Well I've told several of you that I'd be switching my delivery day to Friday to stay in step with the Crafts, but after visiting with Janet at the Bee and Terri we all agreed that by my switching days may confuse some of us, (sorry it already has) So a lengthy story shortened...
DIAMOND S DELIGHTS will continue deliveries THURSDAY AFTERNOONS no later than 3 p.m. Our weekly milk, kefir, Greek yogurt, and cheese orders, butter coming back soon!!! more than fill the frig, so I hope some of you that live close to Worland will continue meeting me there as I arrive so everything can be refrigerated for those of you that are able to take advantage of the great ONE STOP SHOPPING at BEE HEALTHY as CRAFTS deliver their root vegies and special order boxes on Fridays for November and December.
We are so looking forward to our small group of kraut makers and hope we haven't overlooked anyone that is interested in working with us SATURDAY 10 am till probably 1 pm. Those that have asked about making kraut will be coming to the ranch and pitching in to make several crocks full of Savory Kraut, Red Zinger Kraut and Kaptains Kraut. Three of our favorites here at the Diamond S. Helpers will be taking their kraut home for just ingredient cost. The second part of kraut making is bottling three weeks later. Bring your bottles tomorrow if you are unsure if you can make it back to bottle.
This is a reminder to bring either a hat, scarf, or something you are comfortable pulling your hair back off your face and shoulders with for working & an apron. Short sleeved shirts best. Wear layers. You are coming to the sweat shop! Also bring a pair of outside shoes (what's outside must stay out side in the pastures) if you want to meet any of the girls that have been supplying your yummy Raw Milk delights, (little girls too, that have been laying those organic & free range eggs).
A nice order of cheese will be going out tomorrow so we are cutting several new wheels of aging cheese. I love breaking into those new wheels and am excited to have some folks here on the weekend to share them with. There will be some packaged in the frig for shopping after the work and tasting is done If any of you were missed that want to join us just message me that you are coming to observe and taste, so we can have plenty of food for all.

What a wonderful visit with Pennsylvania family over the weekend. We got some great visiting time, some help with our daily chores (dried tomatoes, made apple juice and apple pies for the freezer)and even played some cards. Something we haven't had time for, for a long time.
Now we are thinking about winter and no fresh garden produce from Craft Farms through the winter and planning a day here at Diamond S Ranch to make KRAUT. If you already are a kraut consumer and have made before and hate the mess in your kitchen, just purchase your ingredients from Lloyd and Terri and bring it out and make your own in our work area at the Micro-Dairy. If you want to learn come help and get your kraut at 1/2 price!! Either way works for us. Our little business in not just just providing you with the best dairy products, it's also about bringing back some of the traditional ways of yesteryear. More healthful eating habits, learning together, sharing together, providing great food year around for our families. What better way to spend time with friends than to be productive. Come join us. Today is our last pick up at the Craft Farm. For me it is bittersweet!! The summer has been exhausting but you all have become a special family that I cherish and both Craft Farm and Bee Healthy are such safe spots for this family we all have created. Like minded folks that love good food. I've been trying new things trying to figure out which ones are keepers and which ones we can cut back on!!! You all have helped us so much. Thank you.

Two families came Saturday and spent some time getting to meet (and milk) the girls that supply your Raw A2 milk products. Yes all four of the youngsters got milk & did great. The kitties got an extra treat! We encourage you all to meet the farmer or rancher that supplies your food. Ask questions. You all are welcome to come and see how we do things here at the Diamond S. We learn from you too. Thank you Jessi and Katy for sharing your families and your thoughts. There are many ways to do one thing. Sharing ideas is so important.
Thinking about picking apples, instead of writing or making cheese! Apples and cheese sound good anyone. Come join us today Wednesday 1:30 in our little orchard. Crock pot apple butter, sliced and dried apples, apple pie in a jar, apple juice. Just a few of the ideas we will be creating and you can too.

I always am stumped on a Blog title, so today since I'm in a hurry to be back out the door I'll just tell it like it is! Birthdays are something we don't give much thought to, maybe we just try and forget how fast they seem to roll around.
We missed Saturday Market day yesterday. It's just too close to our regular 89+ mile trip to town for deliveries to the Bee then Craft Farm. By Monday however our raw milk family has had time to pick up all the product they ordered and we can come home with a load of jars for the following deliveries!!!
For deliveries Monday - First to TenSleep then on to the Bee before noon and will be there to meet and answer any questions until 1 p.m. or longer if busy. What we are bringing -

But with fall comes some sadness at our little Micro Dairy here in Hyattville. As many of you know with the close of summer I will be loosing a wonderful gal and her three kiddo's. Amelia will be traveling back home to New Zealand soon with Douglas' help. So thankful to have the rest of their special family, come to help her. When I picked her up at the airport with three little ones, their stroller and enough luggage and belongings to make Hyattville their home for the last 5 months...my admiration for one determined Momma grew. I will miss them all very much, but am so happy they could come help here at our little Micro Dairy for the second time and stay as long as they did. Who knows maybe Wyoming will call again, but for now we're excited for them to continue their dreams together on their land in NZ. Where ever they go I wish them the best! How will we get around the work the long hours without them? Of course I'm asking that and am sure you are too. We will work smarter not harder. Isn't that what we are all told. Maybe a few changes are in store but for now we will just keep doing what we are doing and do the very best we can. This time of year the milk supply naturally declines. We continue to not waste a drop creating as many products and delivering as many bottles of milk as we have. As always get your orders in early. Also: Product with a name on the label belongs to someone already!! No name on the label you are free to purchase.
Changes we will be making to keep our book keeping easier and hopefully you better in the loop - Use the envelopes provided to keep track of all purchases - like you always have but please add a little more information for us - the ledger book will be at home because we have some folks that pick up at all our drops - (Hyattville, TenSleep and Worland) SO PLEASE

Monday we will be delivering some product to TenSleep and on to Worland for a stop at the Bee as we missed the Market Day delivery today! Plus our regular Thursday Bee Healthy Stop 2 p.m to 3 pm and on to the Craft Farm 4 pm to 6 pm. Text or email your orders as soon as possible.
Regular weekly milk, kefir, cream, and greek yogurt orders are filled weekly. Extra is available first come first serve. Remember to bring your jars back each week. If you are interested in weekly deliveries please text or e-mail them so we can get you on the list. Our aging cave is still looking ok and we will be opening some cheeses in the next couple weeks aged from 60 to 180 days. We bring a limited supply each delivery day come give them a try. All fresh products need to be ordered ahead of time, as we want you to receive them fresh.
Today we made a long ride horseback bringing the beef cow herd off the mountain, and got a message that no blog came from a client as we were still coming down. Got to the computer and a message across screen said "Program had problem." Logged back in and page was blank. So am trying to madly recreate - sorry for the delay. Patience is a virtue, my mother used to tell me!

ood morning – Doesn’t time fly when you are having fun? Fall is such a wonderful time of year. Well our time here at the Diamond S flies by way too fast and computer technology is not my long suit, so I apologize for getting info for the week to you all so late or not at all.
This week Amelia and I are having fun with another new Greek yogurt! While she stayed at the Dairy and milked yesterday and took care of everything I loaded up with Gene real early and went with him to for other ranch business, before getting to Riverton a big RASPBERRY sign caught my eye, and I talked him into going there instead of to a restaurant for breakfast! When we got to the turnoff, a cardboard sign attached to their nice Raspberry sign said “Sorry sold out – check at the end of the week” , hung for all to see. But we saw a couple at the farm so drove in and visited with them. They were from Newcastle picking up 25 flats, they’d just finished loading and were waiting to pay for them. They said, “The owners daughter will be here in about 20 minutes, might be worth waiting and talking to her.” So we waited and visited. Sure enough we were allowed to search for ripe berries, which we found plenty to add to this weeks Greek Yogurt. I hope you all enjoy the treat as much as we are! Limited supply order early if possible. 1/2 pints $4, pints $6 and pint & 1/2 $8.
About our yogurt and any of our products that require sweetener, we use only organic products, and natural sweeteners – honey from the bees on our ranch, and pure maple syrup. We only add small amounts, just to enhance the product we are making. Once you become accustomed to less sweetener, it’s amazing how delicious things become! If our sweetened products aren’t sweet enough for you feel free to add a little more of either, at home. If however you ever want to do a sugar detox, the cravings for very sweet anything subside within about 5 days. I’ve read refined sugar is as addicting as heroin. I really don’t know about drug addiction, but do know I completely quit all forms of sugar including natural sugars in anything from fruit to carrots, and it was hard the first 5 days but got so much easier. Now I’m able to eat small amounts but stick mainly to the natural sugars, in fruits, veggies and the two sweeteners mentioned above!
This week come try one of Amelia’s favorite recipes for Potted Cheese. We will have it at Crafts and Bee Healthy for all to sample with either crackers or sourdough bread. Of course we will use our products that the recipe calls for such as - butter, crème fraiche &Colby cheese plus herbs from Craft Farm. Recipes will be available tomorrow.
